About this deal

When it comes to function over form, the UDS has it. If you don’t want to go out and make one out of an old oil drum, the Pit Barrel Cooker Company makes a complete kit with minimal assembly required. This involves filling up your firebox with unlit charcoal and then firing up a small number of briquettes, allowing them to ash over for about 15 minutes and then spreading them over the top of the unlit coals. The smoker is built with double walls and as such does not require insulation. It keeps its heat nicely over long cooks.

Box smokers consist of three compartments. The bottom chamber holds the heat source, which can be either charcoal or wood. There are some models that can use electricity or gas and tend to cook food even faster. Though, if you want an authentic smoky flavor, it’s always best to go with wood and charcoal. For more smoke, you can always burn wood underneath the charcoal in the firebox. Capacity is another consideration for future proofing. Do you and your wife like some smoked meat now and then, or are you gearing up for large groups or competition? We have found the front loading doors on this unit are more user friendly than top loading options, and then pull out ash catching system makes cleanup nice and easy. You can use wood or charcoal or both for fuel. The wood needs to be somewhat moist because you want it to burn in a slow and controlled manner rather than blaze it. Plus, the faster the wood burns, the more often you have to refuel as you are cooking. All the photos you can see above are from my 1050 model, but there are in fact, three versions available, with a comparison of them seen below. Use natural lump charcoal, not briquettes. That way, you can add fresh coals without pre-lighting them. Leave the access door open for 5 minutes to let the air ignite the coals. If you use briquettes, pre-light them in a chimney starter to burn off the chemical aroma. When the inside of your cooking chamber has built up a layer of crustiness that is curling up and flaking off into your food, it is time to take action.

When it comes to installation, the assembly only takes a few minutes and the best portable pellet grill is ready to cook. SPECIFICATIONS: Before you can start worrying about managing the temp in your smoker, you need to get it set up correctly. Assuming you want to cook low and slow, the best way to set up your smoker is going to be the minion method of one of its many variations. Other than the extremely inaccurate dome thermometer (even more than usual so get yourself a decent thermometer setup), there isn’t much else to fault the Akorn on. Whether a smoker is a box (vertical) or offset (horizontal) all depends on the location of the heat source. With box smokers, the source of heat and smoke is right underneath the main cooking chamber, unlike being mounted on the side as it is with offset smokers. This location allows the meat to cook faster, which is a factor you’ll want to strongly consider if you want to cook meat that tends to require a longer cooking time. Strangely, it doesn’t come with any guidebooks or a user manual (other than assembly instructions). So you will have to be prepared to google and fiddle a bit to work out how to use it.As we discussed above, you can find charcoal in the form of lump and briquettes, lump being the purest form. What is the Difference Between a Smoker and a Standard Grill?

It has heat-safe silicone handles on the lid and base for safe handling and a high-quality thermometer similar to a Camp Chef smoker. The smoker can reach temperatures of up to 400 degrees Fahrenheit (204 degrees Celsius). SPECIFICATIONS: There’s also a thermometer probe built in to measure the cooking chamber temperature, and meat thermometer probes are supplied, too, so you do not need to buy a 3 rd party thermometer. While that’s great, it would be wise to do some research into the different types of BBQ smokers beforehand. You get 619 square inches of cooking space in the main chamber, plus 281 in the firebox chamber which you could use for searing. What we like:One of the most prolifically owned charcoal smokers because many beginners start out with a bullet smoker, typically the Weber Smokey Mountain. While you will get a bit of smoke leakage, temperature control is fairly straight forward with this unit. We’ve talked a lot about smokers. Let’s briefly look at the stuff you load them up with – the charcoal.

With higher quality models you won’t have to mess around drilling holes for an upgraded or replacement temperature gauge, or make other modifications to make them work right either. Efficiency Read the manufacturer’s directions on seasoning your smoker before you use it to cook for the first time. With some models, you’ll want to burn off manufacturing grease. In my experience, a new unit runs hotter until it has been broken in because the shiny-bright interior surfaces reflect heat to the core of the smoker. A couple of smoke sessions will coat the inside with a non-reflective patina of soot. If stored outdoors, water can infiltrate the smoker and collect in the bottom. Keep it covered when not in use. Kamado style grills are among the most efficient. Typically, there is one vent at the bottom and one at the top. The lid has a gasket to seal it tight making it efficient and long burning. The bottom line is this: Sometimes the term ‘coals’ is bandied around when we talk about charcoal barbecues, but we are not actually using coal. In fact, it’s very dangerous to cook with. Charcoal: For one, as meat is smoked over long periods at low temperatures, the collagen breaks down making it super tender.
