BUT you need to make sure you have a strong dense cake that can hold up under the weight of the fondant. Finally it’s time to paint the cake gold! The first time I used a gold airbrush, but I didn’t love the gold, too yellowish and not shiny enough.

For all you non-magical Muggles, 11 is the same age Harryis at the start of the series. He finally receives his invitation to Hogwarts and the first book opens with amysterious birthday celebration with Hagrid, a messenger who arrives with a sweet birthday cake for Harry. This Harry Potter Snitch cake is easy to make and quite a statement piece, perfect for any Harry Potter Party, Celebration or event. This cake doesn’t need a ton of supplies or time to make and everyone always loves it. When contemplating where to start, I decided to go with the golden snitch as my first Harry Potter die cut creation. I thought it would be fun to make multiple versions or the design with a bunch of varying, intricate details. I definitely had a great time with it! Starting with the more “classic” one, then venturing to a more “feathery” design, and then a swirly one (because I never miss an opportunity to add a touch of swirlyness: the love bugs I made for Valentine’s Day can attest to that)!

This easy Harry Potter cake is perfect for beginner bakers. It will look amazing even if you don't know how to decorate with frosting. A delicious butterbeer cake topped with marshmallow frosting and sparkly golden snitches will delight everyone at your Harry Potter birthday. And finally add the round balls that the wing’s attach to, but not too large, not a full circle, but not a half circle either. Along the sides, between the original fat swirl add the last smaller swirl, take a dull tool and draw lines (indentations) on the diagonal, on both sides. Now if you’ve seen the Big Bang Theory you know that a perfectly round cake tend to roll… and since we don’t want our cake rolling off the cake plate I cut a 3 inch circle out of one of the half circles. I will say right now that the wings were the hardest part, I even had an EPIC fail. The first time I made it I used gumpaste and it was just too heavy when it was so detailed. We tried both the hot and cold butterbeer options available in wintertime. I far preferred the hot butterbeer and think it tastes very similarto butterscotch mixed with marshmallow. You can try it at home with this delicious butterbeer recipe . The ball pans don’t bake perfectly even so once you level it it doesn’t make a perfect circle so that’s when a filler layer comes in. I was so inspired by the butterbeer cake over on Liv for Cake but her method was a little too complicated for me. Using the Medium circle i added the second line and center top swirls. Then added another swirl to the side as well. Then using the next size down circle I added the large wing line swirl around the entire snitch. I simplified it to make it easier for beginner bakers but kept all the amazing flavors. Our butterbeer cake has butterscotch flavored cake layers with a light and fluffy marshmallow frosting swirled with butterscotch sauce but will be much easier for you to decorate and serve. Add more ganache (best edible glue ever) and top with the other half circle. Finish frosting the cake with more ganache, smooth it out and let it set! I chose a Harry Potter butterbeercake with marshmallow frosting and topped it with sparkly golden snitches flying all around.

Heat up the butterscotch sauce in your microwave for 10 - 15 seconds to make it drizzle a little smoother and serve it at the table in a tiny cream pitcher for pouring over the cake slices after serving. Then I painted one side with my gold dust paste, let it dry, flip it over and painted the other side. Once both sides were dry I cut strips – trying not to cut all the way to the wire so you can still control the shape. For the wings the first thing I did was bend the wire where I wanted it to go into the cake so I knew the length I had to work with for the wing itself. I used 18 gauge covered wire for strength. To boost the butterbeer flavor, the recipe calls for adding more butterscotch sauce to the cake layers during assembly. If you haven't read the book yet, I highly recommend reading this illustrated Harry Potter with your kids ASAP!
